Scampi with Linguine



SCAMPIWITHLINGUINE [2 servings]

INGREDIENTS:

24 LARGE UNCOOKED SHRIMP (31-35 size)

Peeled, deveined and butterflied

1- 2 Tbsp butter

3-4 Tbsp extra virgin olive oil.

3 large cloves garlic, chopped

tsp red pepper flakes (or more to taste)

Zest and juice of small fresh lemon

cup white wine

3 Tbsp fresh Italian parsley, chopped

box” Dreamfields” Linguine, or spaghetti

Cooked al dente

Sea salt and fresh ground pepper to taste

METHOD:

While pasta is cooking:

1.)Heat the butter and olive oil in a large skillet over medium high heat.

2.)Add the shrimp and toss to coat.

3.)Add garlic, red pepper flakes, lemon juice and zest, white wine.

4.)Cook until pink and no longer translucent. (Aprox. 5 minutes) salt and pepper to taste.

5.)Sprinkle in the fresh parsley.

Mound pasta onto large plate or bowl and spoon shrimp mixture evenly over the top.

Serve with a crisp green salad and glass of wine if desired.

Double the shrimp and use one-box pasta to serve 4
