Susan's Chayote Squash



2 fresh chayote squash, washed

Garlic salt (to taste)

Sea Salt and fresh ground pepper (to taste)

1/3-cup light sour cream

-cup Sharp cheddar cheese, shredded


1.)Cut the chayote into about 1 inch chunks

2.)Place in micro safe bowl.

3.)Season with salt and pepper and garlic salt (if desired)

4.)Mix in sour cream and cheese – be sure squash is well coated.

5.)Cover bowl allowing for air vents

6.)Microwave on high until vegetable is tender, turning to cook evenly. Be careful as the steam is very hot.

Can increase or decrease recipe to suit amount of servings desired. This goes well with roasts, chicken, pork, or grilled meats and chicken.
