Trish's Tomato Salsa

Trish's Tomato Salsa

This recipe comes from my friend in Mazatlan, Mexico. Delicious served as a condiment, or over eggs. You can use this like any other salsa you buy in the store, only this tastes fresher and is better for you!

Adjust amounts as needed for quantity desired.

1.)Roma or other solid fresh tomatoes, squeezed and chopped in chunks

2.)White onions, chopped into chunks

3.)Fist full of fresh cilantro, chopped

4.)Jalapeno peppers, seeded and chopped fine to taste.

5.)Sea salt to taste

1.)Squeeze juice and seeds from the tomatoes. Combine all ingredients and add a bit of salt to taste.

2.)Allow to marinate in refrigerator. Adjust seasonings. Drain any extra juices.

3.)At this point you can add a bit of fresh lime-juice if desired.
